Here is a super quick recipe – I’m not even sure you can call it a recipe – for a tofu mousse / yogurt recipe that I am addicted to.

I am always on the look out for lower calorie, high protein snacks and desserts that sate my appetite. This recipe takes 10 minutes and is so easy it almost feels a little ridiculous to share it, but here we are!

The consistency is similar to a mousse or yogurt, and is perfect for a nice low calorie high protein snack. I am using the trusty MyProtein Flavdrops but there are alternatives – you can use any other sweetener to your taste.

Ingredients

200g silken tofu

5 to 10 drops of MyProtein Flavdrops (or alternative sweetener)

Method

If the tofu is wet, or comes in any sort of liquid, drain it first and pat dry.

Stick your tofu straight a into a blender and whizz, whizz, whizz until it is very smooth.

You may need to stop occasionally to push the mixture back down the side.

Add your Flavdrops to taste and give it another blitz.

When smooth, put in to a serving bowl of your choice, eat straight away, or put in the fridge to chill.

Notes

The tofu I use is 56cal per 100g and calories in Flavdrops are negligible, so the recipe below serves up at about 112cal (14.2 protein, 5.2 fat, 1.2 carbohydrate).

My personal favourite Flavdrops are Maple or Toffee flavour.

You should definitely use silken tofu, normal tofu will likely be too dense and change the texture.
